True Food Kitchen to open at Easton center in ’20
True Food Kitchen, the restaurant co-founded by celebrity physician and author Andrew Weil, will open its first Ohio location at Easton Town Center in 2020.
Founded in Phoenix in 2008 by Weil and Sam Fox, CEO of Fox Restaurant Concepts, True Food operates 26 locations in 11 states. After Fox Restaurant Concepts spun off the chain and hired Starbucks veteran Christine Barone as CEO, Oprah Winfrey became an investor.
The 6,000-square-foot restaurant will be part of the 16-acre, $500 million expansion under constructionon the northeast side of Easton. True Food will be at the western end of that development, near Nordstrom. It will feature indoor and outdoor dining, a bar, and interior design elements inspired by the local community.
“We’re attracted to Easton Town Center for many reasons, not the least of which is its innovative mix of retail, residence and dining,” said Shannon Keller, chief The Morrocan chicken entree at True Food Kitchen
marketing officer of True Food Kitchen, in a statement.
True Food Kitchen focuses on showcasing fresh, in-season produce and nutrient-dense ingredients with an assortment of vegetarian, vegan and gluten-free options. The menu includes cocktails such as the Citrus Skinny Margarita, made with fresh-pressed citrus and organic tequila, as well as such dishes as an ancient-grains bowl with miso-glazed sweet potatoes, the Inside Out quinoa burger and Dr. Weil’s original organic Tuscan kale salad.
“We’re very pleased to offer the first True Food Kitchen in the state
of Ohio,” said Jennifer Peterson, chief executive of Easton. “It is an extraordinarily popular destination restaurant . ... There is tremendous demand for this category of dining among our customers, so we fully expect them to develop a strong following from the minute their doors open at Easton.”
True Food Kitchen will be near RH Columbus, The Gallery at Easton Town Center, the first RH design gallery in Ohio and one of only 19 in the country. The three-story, 40,000-square-foot freestanding building will offer home furnishings in a gallery setting, an interactive RH Design Atelier with professional design services, and a rooftop park and cafe. RH Columbus is expected to open this year.
