“The goal isn’t to run cookie cutter locations,” he said. “We want to try and keep things fresh at each location.”
The company’s liquor license requires a distillery operation, meaning High Bank will produce some spirits in Gahanna, but “90% of the space will be dedicated to bar and restaurant operations,” Helman said. “There will be a very small distillery component for some one off or unique things.”
High Bank will look to Gahanna for limited release products for special occasions, he said.
The distillery is finishing up the paperwork and securing the necessary permits, Helman said Wednesday.
