What is your serving experience?

I had a serving job when I was about 17. It was at this place called the Real Pickle in Louisiana. They had over 100 beers in bottles. I was there about a year, and I moved away to do the sailing thing for about two years. I worked as a deck hand on private yachts, on boats from 150 feet to 400 feet, traveling all over. I came back to Louisiana and started serving again. I worked for a fine dining restaurant (Jayne Marie on Cross Lake) in Louisiana. I moved to Memphis about a year and a half ago.

What’s the best part of being a server?

When you get those really good tables. I actually got a package in the mail today. It’s from Australia. My table (customers) sent it to me ’cause they liked me so much. It was a calendar and these chocolates. They gave me all sorts of little knickknack­s, like a little boomerang key chain.

Who’s the biggest celebrity you’ve ever waited

I used to wait on a lot of bands at the Jayne Marie’s place ’cause it was kind of like a jazz supper club. (Singer-songwriter) Nicole Atkins.

Do you find yourself supercriti­cal when you’re being waited on in a restaurant or bar?

I do, but I also give a little bit of lenience because I understand how busy and how demanding the job can be.

What do you like to drink and eat?

My favorite alcohol is Jameson (Irish whiskey). My favorite food? Crawfish, for sure.

What are some of your interests outside of working in a restaurant?

I’m a big outdoors guy. I like sailing, of course. And I also like mountain biking. I’m starting to get into some kayaking, too.
