PEANUT BUTTER COOKIES
Makes about 3 dozen.
1 1 Sift flour and set aside. Cream butter with 1/2 cup sugar and 1/2 cup brown sugar until well-blended. Add egg, peanut butter and vanilla. Mix thoroughly. Stir in flour. Knead in bowl long enough to form a smooth dough. 2 Divide into two parts and roll into a roll about one inch in diameter. Roll in remaining 1/2 cup sugar. Cut into 1-inch pieces and place 1 inch apart on ungreased cookie sheets, dipping cookie tops and bottoms in any remaining sugar. Take a fork and press tops in two directions, making a crosshatch pattern. Bake in 350-degree oven for 15 minutes.
