Nikki’s HOT DRUNK CHICKEN MEATBALLS

Makes about 20.

Ingredient­s — Olive oil 1 (20-ounce) package mild ground sausage, cooked 1 egg

1/ 3 cup seasoned breadcrumb­s

2 large chicken breasts, poached then shredded

1 yellow onion, diced and sauteed until slightly browned

1 cup spinach, chopped and lightly sauteed

1/4 cup tomato paste

2 tablespoon­s Nikkis seasoning, or to taste

1 jigger good bourbon (or 2 if you prefer)

1 cup grated Parmesan cheese

Directions 1 Preheat oven to 350 degrees. Grease a baking sheet with olive oil and put it in oven when preheating. Mix sausage, egg, chicken, breadcrumb­s, onion, spinach, tomato paste, Nikki’s seasoning and bourbon. 2 Form the meat in walnut-size balls (up to golf-ball size) and roll in Parmesan cheese. 3 Place 1 inch apart on hot baking sheet. Press down to flatten just slightly. 4 Bake covered with foil for about 15-20 minutes then uncover and continue cooking for about 10 more minutes or until a little crisp on the outside. Serve alone or with your favorite tomato sauce.
