Nikki’s HOT GUACAMOLE

Makes about 3 cups.

Ingredients 1 avocado, mashed 1 avocado, cubed 1/2 medium onion, minced 4 large boiled eggs, whites only, roughly chopped 1 cup fresh cut corn (about 2 cobs) 3 tablespoons real, fully-cooked bacon bits or pieces 1 tablespoon (more or less according to taste) Nikki’s seasoning

Directions

1 Combine the mashed avocado with the onion, egg whites, corn, bacon and Nikki’s seasoning. Gently fold in the remaining cubed avocado for a hearty dip with tortillas or stuff in a pita for a delicious sandwich.
