SUPER-SEEDY GRANOLA BARS

INGREDIENT­S

— Parchment paper 1½ cups quick-cooking oats ½ cup sliced almonds ¼ cup sesame seeds 3 Tablespoon­s chia seeds ¼ cup hemp seeds 1 teaspoon ground cinnamon ½ teaspoon salt 1 cup unsalted peanut butter ½ cup honey 1 teaspoon vanilla extract

DIRECTIONS

1 Line a 9x9-inch square pan with parchment paper, with enough overhang for easy removal. 2 In a large mixing bowl, combine oats, almonds, sesame seeds, chia seeds, hemp seeds, cinnamon and salt. In a separate bowl, whisk together peanut butter, honey and vanilla extract until very smooth. 3 Pour liquid mixture over dry ingredient­s, and stir until evenly combined. Transfer the mixture to the prepared pan. Press the mixture firmly into the pan, using the back of a wooden spoon, or clean hands. 4 Cover and refrigerat­e for at least one hour of overnight. Gently lift the parchment overhang to remove from pan, and slice into 24 bars. Enjoy immediatel­y, or layer bars between pieces of parchment paper in a covered container and store in the refrigerat­or or freezer. Per serving (1 bar): 139 calories, 9 g fat, 1 g saturated fat, 0 mg cholestero­l, 13 g carbohydra­tes, 2 g fiber, 5 g protein, 51 mg sodium.
