SUPER-SEEDY GRANOLA BARS
Makes 24 bars.
INGREDIENTS
— Parchment paper 1½ cups quick-cooking oats ½ cup sliced almonds ¼ cup sesame seeds 3 Tablespoons chia seeds ¼ cup hemp seeds 1 teaspoon ground cinnamon ½ teaspoon salt 1 cup unsalted peanut butter ½ cup honey 1 teaspoon vanilla extract
DIRECTIONS
1 Line a 9x9-inch square pan with parchment paper, with enough overhang for easy removal. 2 In a large mixing bowl, combine oats, almonds, sesame seeds, chia seeds, hemp seeds, cinnamon and salt. In a separate bowl, whisk together peanut butter, honey and vanilla extract until very smooth. 3 Pour liquid mixture over dry ingredients, and stir until evenly combined. Transfer the mixture to the prepared pan. Press the mixture firmly into the pan, using the back of a wooden spoon, or clean hands. 4 Cover and refrigerate for at least one hour of overnight. Gently lift the parchment overhang to remove from pan, and slice into 24 bars. Enjoy immediately, or layer bars between pieces of parchment paper in a covered container and store in the refrigerator or freezer. Per serving (1 bar): 139 calories, 9 g fat, 1 g saturated fat, 0 mg cholesterol, 13 g carbohydrates, 2 g fiber, 5 g protein, 51 mg sodium.
