The Hiker’s Roll

We live in the age of culinary mashups. ❚ Some are vomitous (Krispy Kreme sloppy Joes). Some are simply silly, aimed at 12 year olds or potheads (cookie dough-Oreocheese­cake sundaes). And some, like beefshi, seem worth a try. ❚ Beefshi? That’s when beef products meet sushi rice in nigri, long rolls and hand rolls, with longtime adjutants like soy sauce, sriracha and wasabi on the side. ❚ Take sleeping dog nigiri featuring grilled hot dog slices bound to sushi rice by nori collars (they recall Spam musubi). Or a Reuben long roll showcasing Reuben sandwich fixings: pastrami, Swiss, sauerkraut. ❚ For a Texas long roll, thin slices of Southwest-flavored roast beef enrobe sushi rice, chiles, scallions, cilantro and cotija. The hiker’s roll, a temaki hand roll, calls on beef jerky, sushi rice, egg and avocado to fill a nori cone. ❚ The beefshi we’re sharing includes a master recipe for sushi rice. Beefshi videos can be viewed online at www.beefshi.com. Now, let’s get rolling! 2.85 ounces beef jerky, in choice of flavor, very finely shredded

2 eggs, beaten 5 sheets nori, cut in half 2 cups prepared sushi rice

1 cups pea shoots or watercress

over medium heat and coat it with cooking spray. Pour in the eggs and let them set until firm. Slide the omelet out of the pan, let it cool slightly, then cut it into thin slices.

1 avocado, pitted, peeled and diced Sriracha, soy and/or wasabi for serving

To assemble hand rolls, add some sushi rice to the center of a half-sheet of nori, then build with egg, beef jerky, pea shoots and avocado. Roll the topped nori into a cone to form hand roll. Top with sriracha, soy and/or wasabi, as desired, and serve. Makes 10 hand rolls.
