“Never rash, never timid” is the motto of Cot­trell Brew­ing Co. in Paw­catuck. Boy, they got that right! In­spired by the rich fla­vor­ful ales of Great Bri­tain, this fam­ily-owned brew­ery pro­duces a short list of out­stand­ing brews with a New Eng­land touch. The flag­ship brew is an Amer­i­can am­ber ale. Of course, tasters will want to try a pale In­dia ale, or a Czech-style pil­sner. I was in­trigued most by a Scotch Ale, in­spired by Brew­mas­ter Char­lie Buf­fum’s his­toric dis­cov­ery of Oliver Haz­ard Perry’s sunken ship, the Buf­fum says the “dark and stormy brew sum­mons ... the mys­tery of things long lost in the bot­tom of the ocean.” Cot­trell’s Bar­rel-Aged Se­ries in­cludes five unique beers.
