A new Parlor Doughnuts is opening on the north side

Some New Year’s resolution­s are about to bite the dust for lots of folks with the opening of Cronut-style pastry purveyor Parlor Doughnuts in Fishers next month.

The shop at 13588 Bent Grass Lane, Unit 107, begins serving Feb 9.

It’s the second Parlor Doughnuts location in the Indianapol­is area and the ninth in the state for the brand that got its start in Evansville in 2019 serving what it calls layered doughnuts.

There are about 35 shops in 12 states now.

A location at 805 W. 10th St. near the IUPUI campus in Indianapol­is opened in August 2023.

The Fishers store is operated by Marissa and Wesley Barnes, who already have locations in Valparaiso and Munster.

What’s on the menu at Parlor Doughnuts?

The shop features 24 signature doughnut flavors, the likes of bourbon caramel, turtle cheesecake, Dreamsicle and lemonade with vegan, keto-friendly, and gluten-friendly options in the mix.

Beyond the sweets, there are breakfast items such as bacon, egg, and cheese on an unglazed doughnut, breakfast tacos and acai bowls.

Milkshakes can be crafted with any doughnut flavor.

Customers can also find a doughnut flavor that’s exclusive to the Fishers store. That will be determined from customer suggestion­s.

At the Valparaiso store, the special doughnut is a key lime flavor called The Viking that plays off the mascot and green and white colors of Valparaiso High School.

From fitness to doughnuts

The Barneses opened their Valparaiso location in 2022, and the Munster location in 2023.

The Valparaiso couple had been looking for a breakfast franchise concept to open when they ran across Parlor, Marissa Barnes said.

“That was just a big gap in the marketplac­e,” she said. “And we came across Parlor and just fell in love because it really brings different generation­s together; your senior citizens all the way down to your little ones. Everyone loves doughnuts.

“So it’s great to see the grandparen­ts come in and bring their grandkids.”

Wesley Barnes, 38, was in the wealth management business for 15 years.

Marissa Barnes, 34, most recently was a head coach at Orangetheo­ry Fitness.

“I ended up switching gears big time there,” she said. “It’s a lot easier to sell doughnuts than fitness.”

The couple plans to have a total of 10 stores operating in the state by 2030; with Carmel, Zionsville and north Indianapol­is being considered for future shops.

When does the new Parlor Doughnuts open?

The Fishers location will open Feb. 9, and will operate from 6 a.m. to 6 p.m. Monday through Friday, and from 7 a.m. to 3 p.m. Saturday and Sunday.
