Easton site offering Italian dishes, baked goods, and vegetarian options

There’s a new “Local Eatery” in Easton’s Simon Silk Mill that offers fresh Italian dishes, baked goods made on site and options for those who are vegetarian and eat gluten-free. The Local Eatery is a new name for what was once Mario’s Italian Eatery, which opened in December. Owner David Siwy says fans of Mario’s will still be able to enjoy their favorite freshly made Italian pasta dishes and sandwiches as well as shop from the imported groceries.

The name change reflects a focus on using locally grown and sourced ingredient­s. And Siwy said there are some menu additions.

For those who eat gluten-free, the restaurant now has many more choices with the addition of gluten-free rolls for traditiona­l sandwiches as well as gluten-free pizza and pasta. For vegetarian­s, the menu offers new alternativ­es such as the Zucca, which features spaghetti tossed in a butternut squash consomé with mushrooms, roasted red peppers, broccoli rabe, roasted corn, and pecorino.

The Local Eatery also is continuing to provide food for its business neighbor, County Seats Spirits.

Plus, if you have a sweet tooth, they have you covered.

“All of our baked goods are homemade on premise,” he said.

Sheetz grand opening

Sheetz — known for its fast, tasty food, convenienc­e store essentials, and devoted fans — will hold a special grand opening at its newest location in Upper Macungie Township.

The grand opening at 951 Trexlertow­n Road, Upper Macungie Township, will startnoon Thursday. Multiple prizes will be awarded, including the grand prize giveaway of free Sheetz for a Year.

The store’s official ribbon-cutting ceremony is set for 1:45 p.m. Sheetz will welcome customers by offering free self-serve coffee and soda for the entire day of the grand opening celebratio­n.

Sheetz currently operates 664 store locations across Pennsylvan­ia, North Carolina, Virginia, West Virginia, Ohio and Maryland, with all locations open 24/7, 365 days a year.

The new Sheetz offers the chain’s popular “Made-To-Order” menu, where customers can order any of Sheetz’s customized specialty drinks or food items around the clock using a touch-screen.

And a Wawa too

Always looking to be balanced in our reporting, we also have news to share about the other half the convenienc­e store war: Wawa.

The chain recently opened its newest store in the Lehigh Valley — 4089 Jandy Blvd., Lower Nazareth. Wawa plans to open 54 new stores and create more than 2,500 new jobs throughout the year.

New life for a former diner

Plans are in the works to transform the former Forks Diner into a new auto repair business, which will be called Your Mechanic PA, LLC.

Best friends, Dave Fiore and Sherief Elsamra had been looking for a second location for their growing repair business. They opened their flagship shop, Wrenchtec, at 20 E. Lawn Road in Nazareth, four years ago.

They hope to complete the constructi­on at the diner site, 3315 Sullivan Trail, and open the new shop by early spring.
