Making the most out of rainy weather, Oklahoma products

April is Made in Oklahoma Month, and the MIO Coalition has recipes inspired by rains behind and ahead of us.

Make the most of time relegated to the indoors, slicing fresh vegetables and matching them with zesty flavors from the heart of Oklahoma’s Little Italy in Krebs: Lovera’s Italian Market. The Baked Pasta Primavera uses ingredients such as Sam Lovera’s garlic-basil pesto and the award-winning Caciocavera cheese son-in-law Shawn Duffy oversees.

Throw in some of the sublime pasta made by Oklahoma City chef Chris Becker, through his Della Terra Pasta Co., and you’ve got a nutritious, delicious meal.

Skillet Chili and Cornbread calls for a similar attention to detail in preparation, but the result is a self-contained entree that works beautifully stored and taken to work or school for lunch the next day.

For all your patience, the MIO Coalition offers a decadent blackberry cobbler with custard sauce that matches perfectly with Stillwater’s goat cheese-based ice cream from Billy Goat Ice Cream Co.

The Robert M. Kerr Food & Agricultural Products Center at Oklahoma State University is partnering with University Dining Services and the MIO Coalition to support Made in Oklahoma Day from 11:30 a.m. to 1:30 p.m. Wednesday on the Student Union North Porch Lower.

Coalition members will distribute samples, including meat, desserts, beverages and condiments. The companies include Ace in the Bowl Salsa, Andrews Honey Bees, Bar-S Foods, DeVine Water, Diane’s Signature Products, Head Country, KiZE Concepts, Kratos Foods, Mitchell’s Sausage Rolls, Ozarka Water, Prairie Wolf Spirits, Ralph’s Packing, Schwab’s Finest, Snider Farms, Southern OKIE, Suan’s Foods and Woody Candy.
