OVERNIGHT ROAST

1 (4 or 5 pound) eye of the round beef roast 1 cup brown sugar 1 cup barbecue sauce

Wash and dry the roast and lay it on a large piece of foil. Sprinkle the roast with the brown sugar and fold the foil around it to seal it. About 10 p.m., heat the oven to 250 degrees, and put the roast in the oven and leave overnight. The next morning, about 6 a.m., turn the oven off and remove the roast. Open, slice and cover with barbecue sauce. Re-close and refrigerat­e until serving time. Warm in 350-degree oven 20-to-30 minutes before serving.
