Mandarin Orange Salad
You’ll need:
• 1/4 cup olive oil
• 2 tablespoons rice vinegar
• 1 tablespoon sugar
• pinch of pepper to taste
• 1 (11-ounce) can mandarin oranges, drained
• 1 (6- to 9-ounce) bag mixed greens
• 1/2 cup chopped red bell pepper
• 1/4 cup slivered almonds
What to do:
1. Combine olive oil, vinegar, sugar and pepper in a jar; shake well.
2. In a bowl, add oranges to dressing mixture and chill for 30 minutes.
3. Place lettuce greens in a bowl; mix in red bell pepper.
4. Gently mix in dressing.
5. Top with slivered almonds. Serves 4 to 6.
