Garlic Vodka

Yield: 10 servings

INGREDIENT­S:

1 large head of garlic, cut in half widthwise

Olive oil

Salt

Pepper

2cups good-quality vodka

DIRECTIONS:

1. Preheat the oven to 300degrees; place a rack in the middle of the oven.

2. Place garlic halves cut-side down in a small baking dish. Drizzle with olive oil, and sprinkle with salt and pepper. Cover the baking dish tightly with foil, then transfer to the oven. Cook until the garlic is tender and golden, about 1 hour. Let the halves cool completely.

3. Add garlic to a jar with the vodka. Let sit for 12 to 24 hours, depending on how strong a garlic flavor you want. Strain into a clean container. Cover and store in the refrigerat­or for up to 2 months.
