WEEKLY RECIPE with Bette Banjack — Fritters

The fritter is comfort food that dates back to early Roman times. The word fritter means “a fry.” There are a lot of doughy foods that like fritters are fried. But fritters stand out as they can be made with many different vegetables & fruits.

I am sharing with you my Basic Fritter Recipe early in the summer growing season. So, you can enjoy it in many different ways — both savory & with fruit. Corn fritters are the most popular. Be creative & see what you can make them with. So here goes …

BASIC FRITTER RECIPE

½ cup vegetable oil 2 cups corn, chopped apples, or your favorite fruits or vegetables

1 cup all-purpose flour ¼ cup milk

2 eggs 1 tsp. baking powder 1 tsp. salt Vegetable oil for frying Powdered sugar (optional)

By hand combine the 7 first ingredient­s together in a large enough bowl. Cover the bottom of the frying pan (approximat­ely ¼-inch) with vegetable oil and wait until it is hot enough to fry fritters quickly. Test by dropping a teaspoon of batter into the hot oil. Continue making in small 3-inch rounds. Drop several into the frying pan at one time. Brown on one side; flip to the other side and fry until crisp, cooked through but still tender. Dust with powdered sugar (optional) for an added treat; it really enhances the flavor.

They can be served coldwarm-hot. They freeze well for several months either wrapped or in a plastic container.

Fritters with a leafy salad make a great lunch or dinner.
