Mozzarella Vegetable Salad

It’s a well-known fact that vegetables are good for you. But just as important, this ultra-easy salad tastes good!

1 cup sliced carrots

1 cup chopped fresh broccoli

1 cup chopped fresh cauliflowe­r

1 cup sliced fresh mushrooms

3/4 cup shredded reduced-fat mozzarella cheese

1/2 cup fat-free Italian dressing

2 tablespoon­s fat-free mayonnaise

1. In a large bowl, combine carrots, broccoli, cauliflowe­r, mushrooms and mozzarella cheese. Add Italian dressing and mayonnaise. Mix gently just to combine.

2. Cover and refrigerat­e for at least 1 hour. Gently stir again just before serving. Makes 4 (1 cup each) servings.

* Each serving equals: 95 calories, 3g fat, 8g protein, 461mg sodium, 3g fiber; Diabetic Exchanges: 2 Vegetable, 1 Meat.
