Amuse on Broadway to offer Mediterranean cuisine
SARATOGA SPRINGS, N.Y. >> A new type of restaurant is coming to the Spa City with the opening of Amuse on Broadway.
Located at 420 Broadway, in the same space at Saratoga’s Broadway Deli, Amuse on Broadway is expected to open on Friday, Nov. 8.
Owned and operated by chef Dominic Colose, the restaurant will serve Mediterranean cuisine, including flavors from countries like Turkey, Israel and Morocco.
“I’ve always been interested in the Medditeranean cuisine,” Colose said. “I’ve always done Italian and French, and then some Spanish - but I’m trying to get away from that and do more of that North African and Eastern Medditeranean.”
Colose has a very good friend from Turkey, he shared, “and a lot of the experiences eating at his home really has inspired me to use some of those flavors.”
Amuse on Broadway’s menu features about a dozen small plates, ranging from $8 to $20 each, and Colose recommends trying a little bit of everything. “I encourage people to try a lot of different things, even things they’ve never had, and share them,” he said.
“Our menu is going to change constantly,” Colose continued. “It’s a very small menu, but it will change quite often.”
One dish called shakshuka is made with tomatoes, peppers, eggs and lamb sausage.
Throughout the menu Colose is taking inspiration from different Mediteranean cuisines - but rather than replicating a classic recipe, he’s creating his own new dishes. “I’m incorporating a lot of flavors of the region, without doing necessarily traditional dishes,” he explained. “It’s the flavors and the spirit of the region, and the spice profiles of the region.”
A lot of the food will be cooked and served in tagines and different earthenware.
Guests looking for an interactive dining experience can sit at the chef’s counter, where Colose will be close by to chat with customers.
After working as a chef among the local restaurant scene for the past 15 years, Colose decided to embark on this new entrepreneurial endeavor of his own. What made him want to start Amuse on Broadway was “the ability to cook in an environment that I can more or less control cook what I want, how I want it, on a small scale,” he said.

Daniel Chessare at another downtown restaurant The Wine Bar. In 2018 Chessare opened the deli, which serves breakfast and lunch, but he wasn’t utilizing the space in the evenings. When the two chefs got together, “We thought we could make better use of it,” Colose said.
Some changes, including a new chef’s counter are being made to the space before Amuse on Broadway’s opening.
Looking ahead to the future, Colose’s goals for Amuse on Broadway are simple. Along with building a strong customer base, “I just want to cook good food for people,” he said.
Once open, Amuse on Broadway’s will be open for dinner with table service from 5:30 to 9:30 p.m. Wednesday through Saturday, following the deli’s daytime hours.
Beer and wine will be available at the restaurant.
