Culi­nary stu­dents at Cap­i­tal Re­gion BOCES had a col­or­ful lesson re­cently in the acid­ity of food and its im­pact on food safety. Un­der the watch­ful eye of in­te­grated sci­ence Teacher Brian Con­way, stu­dents used lit­mus pa­per and tested var­i­ous food items and com­bi­na­tions to see whether the acid would make the food un­safe to con­sume.
