Cappuccino Rice Pudding

•1 bag Success White Rice ®

•4 tsp instant coffee powder

•1tbspboili­ngwater

•11/2 cups cold skim milk

•1 pkg (1.4 oz) sugar-free instant chocolate puddingmix

•1/2tspground cinnamon

•1 cup fat free frozen whipped top ping, thawed

•1/2 cup chocolate wafer crumbs

Prepare rice according to package directions. Allow to cool.

Dissolve coffee granules in boiling water and set aside. Combine milk, pudding mix and cinnamon in a medium mixing bowl. Using the paddle attachment, beat on low speed for 2 minutes. Fold in coffee, cooled rice and whipped topping. Spoon into serving dishes. Garnish with additional whipped topping and wafer crumbs.
