W. PALM BEACH - Elpenice “Niki” Sarantos, beloved wife of the late Fr. John Sarantos for 52 years, passed away Saturday, May 27, 2023 at her home surrounded by her loving family.

She was born on July 22, 1926. She was the daughter of James and Helen (Socorelis) Pappas. Niki Attended Dracut schools, having graduated from Dracut High School class of 1943.

Niki and her husband served the Greek Orthodox Parish in Lansing Michigan from

1948 to 1956. They were invited to serve the transfigur­ation Greek Orthodox Parish in 1956 and they remained in this one parish for 37 years. Together they brought the parish up from 190 families to 700 when Fr. John retired in 1993.

Niki’s great love was the church of the Transfigur­ation of Our Savior in Lowell, MA. She was baptized and married in this church. She taught Sunday School, attended afternoon Greek School classes, and was a guiding force with Fr. John in making this community an outstandin­g parish in New England.

Niki loved to travel. She lived her winters in Palm Springs, California in her later years.

While in California, she pursued her passion for art. She became an artist in her late seventies, winning many awards for her work in California. She traveled extensivel­y with a group of artists from the west coast. Some of the places she had traveled with the group were Spain and Portugal.

Niki is survived by her son and his wife, Peter Sarantos and Dr. Barbara Economos MD of

West Palm Beach, FL, her two grandchild­ren;

John and Kaitlyn Sarantos, and her three greatgrand­children. She was the mother of the late James Sarantos and the sister of the late Vasil and Leonidas Pappas.

Visiting hours Tuesday, June 6, 2023 from 10:00 AM – 11:00 AM at Transfigur­ation of Our Savior Greek Orthodox Church, 25 Father John Sarantos Way, Lowell, MA 01854. Funeral Tuesday, June 6, 2023 11:00 AM at Transfigur­ation of Our Savior Church, Lowell, MA. Burial in Westlawn Cemetery, Lowell, MA. In lieu of flowers, donations can be made in her name to Transfigur­ation of Our Savior Greek Orthodox Church, 25 Father John Sarantos Way, Lowell, MA 01854.
