The master chocolatie­rs at Chokolá focus on small, handmade batches of perfected sweetness using only organic ingredient­s. Here, they do the cleaning, roasting, cracking and grinding of the beans. Taos-based chocolatie­rs of Chokolá are husband-and-wife team Javi Abad and Debi Vincent, who besides creating many varieties of yum, offer specialty chocolate-drink elixirs, bonbons, bars, chocolate mousse, pour-over coffee, milkshakes, gelato and sorbet. The Mexican roots in this fare isn’t limited to just succulent shrimp, meaty fish and fried ice cream. The extensive menu includes American-, Latin- and Mexican-style creations made with steak and chicken. There are tasty options for vegetarian­s as well. The “Guad” can get crowded due to popularity, however the order line is a well-oiled machine and the service is quick.
