As a co-owner of the Taos Diner and a proud New Mexican, I would never consider using anything but New Mexico Certified Chile™. Under the association’s voluntary chile certification program for restaurants, farmers, growers’ markets and others, an independent party confirms that products labeled as from New Mexico actually are grown in our home state. Our association and our restaurants are committed to the chile industry. When our chile industry prospers, so do the related partners in New Mexico’s economy.
