Serves 1-2
1½ pounds whole fish, yellowtail snapper or similar 4 ounces buttermilk 2 ounces lemon butter sauce Parsley for garnish
Gut fish. Make a few cuts along each side of fish so it will cook evenly; pat fish dry. Dip whole fish in buttermilk. Submerge fish in a deep fryer for 5-7 minutes (depending on size) until golden brown. Drizzle with lemon butter sauce and garnish with parsley.
