1½ pounds whole fish, yel­low­tail snap­per or sim­i­lar 4 ounces but­ter­milk 2 ounces lemon but­ter sauce Pars­ley for gar­nish

Gut fish. Make a few cuts along each side of fish so it will cook evenly; pat fish dry. Dip whole fish in but­ter­milk. Sub­merge fish in a deep fryer for 5-7 min­utes (depend­ing on size) un­til golden brown. Driz­zle with lemon but­ter sauce and gar­nish with pars­ley.
