su­pe­rior chefs smartly in­cor­po­rate only the best of these tech­niques. On my re­cent trip to Paris, my friend Con­nie and I dined in three ex­cep­tional fine din­ing es­tab­lish­ments: Le 39V, Truffes Folies Paris and Palais Royal Restau­rant.
