There’s always a secret family recipe. For George Mendes, it’s his mother’s famous omelet infused with the unique flavors of linguiça and chouriço sausages. “She would make [this] for us growing up as a kid,” recalls the executive chef of NYC’s Michelin-starred Portuguese restaurant Aldea, noting it was a common school lunch. Whether eating it as is or as a sandwich filling, the cook calls the savory dish “comfort food at its best.”
