Hey y’all! I hope everyone is having a wonderful week.

This week has thrown many things my way, but I have been blessed with every twist and turn. I’m forever thankful for all the things that have been laid into my path.

Last night, Miss Callie participat­ed in the county 4-H speech contest. I tried my best to talk into giving a lovely speech about the importance of Tennessee agricultur­e and how it benefits the world. She was not having it, and I decided to have a moment of picking my battles wisely.

She got to pick something else…what she wanted. Quilting? No. Canning? No. Any 4-H related topic? NO.

She chose none other than Dolly Parton. She wanted to share how Dolly has given back to home state of Tennessee, but even more so, to the county of Sevier.

I suppose I should also say that she hates, loathes, detests public speaking. She will sing in church all day long with hundreds of views. She will not; however, allow me to record her speaking and post it to Facebook. How dare I!!

I allowed the Dolly speech. She read that speech no less than 50 times the last 2 days. She got up there and rocked it. She really did. I was so stinking proud of her. She came home with an overall purple ribbon for her grade and gets to go to regionals in Bristol soon.

Today, in honor of Dolly, I wanted to share with you her famous recipe for 5 layer casserole. I hope you enjoy it and remember Miss Callie every time you take a bite. Keep your fork, and remember: You have to put up with the rain if you want the rainbows.

Dolly’s 5-Layer Casserole

- 3 large russet potatoes, sliced

- 1 pound ground beef, browned and seasoned

2 onions, sliced and rings separated

- 1 can diced tomatoes - 1-1/2 green bell peppers, chopped

Salt and pepper, generously to taste

- Preheat the oven to 350°F. Prepare a 13×9-inch baking dish with cooking spray - Spread an even layer of sliced potatoes at the bottom of the dish. Season with plenty of salt and pepper on top. Top the potato layer with the browned ground beef.

- Top the ground beef layer with a layer of sliced onions and season generously. - Top the onion layer with an even layer of diced tomatoes and season generously Top the tomato layer with chopped green bell peppers.

- Cover the baking dish with aluminum foil. Bake this Dolly Parton casserole, covered, for two hours. Then remove the dish from the oven, uncover and allow it to cool slightly before serving.
