Apple Pie Recipe For Festival

Our Lincoln Revenue Office is one busy place. Last year, I went in August to get the car license trying twice and the line was too long; finally decided to sit it out. After that long wait, Jeannie said, “you haven’t been assessed.” I thought I had (senior moments) but records don’t lie, and she was so nice to assess for me by phone.

The rest was taken care of quickly.

This year I assessed! When I went by, ready to wait my turn, the chairs were empty. Pam told me, “Everyone is out buying school supplies.” In a few days I will wait my turn again to pay taxes. We know the old saying about taxes but I like best what President Reagan said, “The tax payer — someone who works for the federal government but doesn’t have to take the Civil Service examinatio­n.”

Though it is a full month away, already there is talk and planning for the Apple Festival.

Many years ago, a friend suggested that I should include apple recipes leading up to the festival.

Here is one for diabetics:

Sugar Free Apple Pie

3 cups sliced golden delicious apples

1/2 of 6-ounce can frozen apple juice concentrat­ed, undiluted

3 tablespoon­s cornstarch

1 1/4 teaspoon cinnamon

1/8 teaspoon nutmeg

22 pkgs. Sweet ‘N Low pie crust

Mix all ingredient­s together in large bowl, coating apples well. Pour into double pie crust.

To brown pie crust before baking, brush top with milk and sprinkle with one package of Sweet ‘N Low. Bake at 425 degrees for 30 minutes. Makes an eight-nine inch pie.
