Autumn Calls For Baking Pies

The rain came just in time for my sparse “garden.” Previous showers and sprinkles have kept two big tubs filled with water from the run-off below the eaves and valleys of the roof. Last Monday, I used the last of the water and when it fell, rain filled them again. Now the roses and peppers can be watered for a few more weeks.

Cooler weather feels like autumn and we feel more like heating up the oven.

Macaroon Apple Pie

1 and 1/2 cups all purpose flour 1 cup shortening 1/2 teaspoon salt 2- 3 tablespoon­s cold water Filling: 4 cups sliced tart apples 1/2 cup sugar 1/4 teaspoon ground cinnamon Topping: 1/2 cup all purpose flour 1/2 cup sugar 1/4 teaspoon salt 1/ 2 teaspoon baking powder 1 egg 2 tablespoon­s margarine, melted 1/2 teaspoon vanilla 1/4 cup flaked coconut Combine flour and salt; cut in shortening until crumbly. Gradually add water, tossing with fork until ball forms. Roll out pastry into a 9- inch pie plate; flute edges. Toss apples with sugar and cinnamon and pour into crust. Bake 20 minutes at 375-degrees. Combine first four topping ingredient­s in a bowl. Stir in egg, butter and vanilla until smooth. Add coconut. Spoon over hot apples, carefully spreading to cover. Bake 30 minutes longer until apples are tender. Enjoy.

The annual homecoming at Sugar Hill Church is set for this Sunday, Sept. 29. Everyone is urged to attend and bring a favorite dish for a potluck meal after the church service, and stay for the music and singing that afternoon — a full day of fellowship and worship.
