Restaurant Offers A ‘Taste Of Mexico’
PRAIRIE GROVE — The newest restaurant in Prairie Grove opened June 1 and the owners are looking forward to serving the community.
Con Sabor a Mexico, “with a taste of Mexico,” is owned by Apolo Castillo and his wife Azucena Castillo. Their son, Apolo Catillo Jr., also is involved with the restaurant. Other family members working at the restaurant are Marcelo Maldonado as manager and Manuel Martinez as chef.
Apolo Castillo said the restaurant’s first week of business was very good.
“We’d like to welcome everyone,” said Castillo. “We’re happy to serve people and hope that people will like to try us.”
The restaurant is located at 107 Pittman St. The Castil- los live in Fort Smith but they are looking forward to having a business in Prairie Grove. They also own other Mexican restaurants. Maldonado and Martinez live in Prairie Grove.
Castillo said the building and its location near downtown Prairie Grove is what attracted him to this area. The traffic along the street should be good for business, he said.
The couple recommends several dishes for those who are visiting the new restaurant for the first time. These include steak quesadillas, linguine pasta with chicken, beef or shrimp, enchiladas with green or red sauce or “Mole Poblano,” a special recipe from Mexico.
The restaurant has five employees and is open 11 a.m. to 9 p.m. Monday-Thursday and 11 a.m. to 10 p.m. Friday and Saturday.
