School Days Bring Busy Days

It is almost time for school to start, and I didn’t think our young ones could be any busier, but in addition to “getting ready” for school days, there is the fair and activities before and during that, also the regular sports events, etc.

Some are still vacationing, one family at the beach and one couple decided that they wanted to see more of Oklahoma City! I have been through there once, (at night with the constant noise of oil machinery) and I wasn’t impressed, but the photos and description they are sending, paint an entirely different picture.

A full report from my friend Pam Fawver in Virginia, told of their annual church potluck dinner. They have family to come from far and near for that. Pam is a niece of Elsie Hanger, a long-time friend who passed away two years ago, and Pam continues to keep me up on family news.

I missed our last potluck meal, but here is one of my favorite dishes to fix when I do get to attend, because it is easy to make, and I never bring home leftovers.

Swiss-Onion Potato Bake

1 cup finely chopped sweet onion

2 Tbsp. butter

1 pkg. (30 oz) frozen shredded hash brown potatoes, thawed

2 cups (8 oz) shredded

Swiss cheese

1 tsp. salt

1/4 tsp. pepper

2 eggs

1 cup milk

1. In a small skillet, saute onion in butter until tender. In a large bowl, combine the hash browns, cheese, salt, pepper and onion mixture.

2. Transfer to a greased 13-in. x 9-in. baking dish. In a small bowl, whisk eggs and milk; pour over potato mixture.

3. Bake, uncovered, at 350 degrees for 35-40 minutes or until edges begin to brown. Let stand for 5 minutes before cutting. Yields: 12 servings.
