A Dusting Of Snow Is No Surprise

It was no surprise when we received snow this past week. I have seen it cover tall flowers in mid-April, this sometime in the mid-1950s. This last snow just nipped some blossoms, no real damage so far.

A friend called and said that a record his aunt had kept many years ago, reports “a deep snow” on April 13, 1933, and the next Sunday was Easter. A record I have states that was on a Thursday, so the snow was still on for Easter. No “egg hunting”?

I was so happy to be finishing a small quilt for my 3-year-old great-granddaugh­ter and it was going very well when suddenly, my trusty old sewing machine caused troubles! The handwork was finished, but not those long seams to put the last part together.

So, I called Mr. Honea, a very capable machinist as I knew from some of his work several years ago. He picked it up, and I am looking forward to much more happy stitching.

While we are house bound, we’re looking for something different to pass the time. How about some recipes to follow, and enjoy later?

Sugar-free Fudge

¼ cup diet margarine 2 ounces unsweetene­d chocolate

24 packets Equal sugar substitute

1 tsp. vanilla

1 (8 oz) cream cheese, softened

In a large saucepan, melt margarine over low heat. Add chocolate, stir in Equal and vanilla. Combine chocolate mixture with cream cheese and beat until smooth. Spread in greased 8- inch square pan. Keep refrigerat­ed.

In a second recipe, Sugarfree Low-Carb Fudge, omit the margarine and add 16 oz. cream cheese instead of 8, and it calls for ½ cup Splenda instead of Equal. Nuts may be added to each. Enjoy!
