One of the best things about Dis­ney food is that no mat­ter what type of eater you are, you’ll be able to find some­thing that fits your pref­er­ences. Whether you are vege­tar­ian, ve­gan, gluten free, dairy free, etc., Dis­ney has got you cov­ered. As some­one who eats a pri­mar­ily vege­tar­ian diet, I’m al­ways on the look­out for a vege­tar­ian meal that is both healthy and sat­is­fy­ing.

One of my fa­vorite places to have lunch at Walt Dis­ney World is at Columbia Har­bour House. With a wide va­ri­ety of se­lec­tions, the menu is able to please both my vege­tar­ian palate and that of the car­ni­vores in my fam­ily.

Vege­tar­i­ans will es­pe­cially love their Light­house Sand­wich. Multi­grain bread is slathered with gar­licky hum­mus, topped with a crisp tomato, and a sim­ply dressed broc­coli slaw. It is served with a side of chips, but you can up­grade that to a side of fries for a small fee. The sand­wich is tasty. The honey mus­tard-fla­vored broc­coli slaw adds a nice crunch to bal­ance out the smooth and creamy hum­mus. I don’t have to feel too guilty about eat­ing the Light­house Sand­wich. It’s a healthy al­ter­na­tive to the some­what un­healthy choices that you can find through­out the park. Pair it with Columbia Har­bor House’s fa­mous Lemon Slush and you have a light and re­fresh­ing lunch — per­fect for a hot Florida day!

It is easy to recre­ate the Light­house Sand­wich at home. With only five sim­ple ingredients, you’ll be able to whip one up in no time - or make it more chal­leng­ing with home­made hum­mus. The beauty of mak­ing this sand­wich at home is that you can switch up the ingredients to add an ex­tra layer of fla­vor - like us­ing olive or spinach and ar­ti­choke hum­mus. This sand­wich would also be de­li­cious topped with sprouts, for an added crunch.


Multi­grain Bread Hum­mus (home­made or store bought) Broc­coli Slaw Ken’s Honey Mus­tard Dress­ing Toma­toes


- In a small bowl, mix about a ½ cup of broc­coli slaw with the honey mus­tard dress­ing. - The amount of dress­ing de­pends on how fla­vor­ful you want it. I used about ¼ cup.

Set aside. - Spread a gen­er­ous layer of hum­mus on two slices of multi­grain bread. - Top one slice with broc­coli slaw. - Top the other slice with two slices of tomato. - Put the sand­wich to­gether. Serve with a side of chips or fries.
