Priority violations:
• Dishwasher is not getting the plates hot enough to sanitize. Gauge for wash cycle is reading 140°F and should be at least 160°F. Final rinse cycle does not always reach 180°F on gauge. Heat sensitive strip run through dishwasher and did not change color as needed. Manually wash and sanitize until repaired. Repeat violation.
• Food items checked in walk-in cooler are not at 41°F or below. Monitor to ensure unit is working properly. May have been in defrost mode. Nonpriority violations:
• Back-up thermometer is not accurate. Reading below 30°F but food checked is at 41-42°F. Replace thermometer. Repeat violation.
• Dishwasher does not maintain wash or rinse temperatures through multiple cycles as it should. Contact a professional company or repair person to repair machine. Replace if needed. This issue has been ongoing and needs to be corrected properly and permanently.
• Condensation leak in the walk-in freezer.

Priority violations:
• Hot case is not holding food at 135°F or above. Destroy food as needed. Do not hold food for more than 4 hours, marking down when items were prepared (until new hot box is installed). New hot box on order.
• Walk-in is not holding food at 41°F or below. Service call made during inspection. Repeat violation. Nonpriority violations:
• Hot water faucet at threecompartment sink won’t shut off completely.
• Excessive water condensation in both food walk-in and beer walk-in.
• Floor in beer cooler is no longer in good condition or easily cleanable. Floor is no longer sealed so water is being absorbed into flooring material. Replace as needed.
