Critical vi­o­la­tions are de­fined as items re­lat­ing di­rectly to fac­tors that lead to food-borne ill­ness and must be cor­rected im­me­di­ately. Non­crit­i­cal vi­o­la­tions are de­fined as items that re­late to main­te­nance of food op­er­a­tions and clean­li­ness.

El Su­per Cam­pesino 140 W. Main St., Gen­try Critical vi­o­la­tions: The meat case is not keep­ing tem­per­a­tures of 41 de­grees or be­low. Non­crit­i­cal vi­o­la­tions: Seal around the doors of the meat case need to be replaced. No test strips were avail­able. Ar­eas in the food prepa­ra­tion ar­eas need to be re­sealed prior to open­ing.

There is a leak un­der the soda/ice ma­chine in the lobby.

Critical vi­o­la­tions: Em­ployee did not wash hands be­fore pre­par­ing food; em­ployee washed hands in the three-com­part­ment sink. Em­ployee made bare hand contact with a bun and let­tuce while pre­par­ing food. An opened pack­age of raw ba­con was stored above a con­tainer of hash browns and sausage. No san­i­tizer was be­ing dis­pensed at the three-com­part­ment sink. Cooked chicken strips were at 98 de­grees, must be cooked to 178 de­grees as per the man­u­fac­turer’s instructions. Chicken strips, bur­ri­tos and sausage bis­cuits were not at 135 de­grees or above in hot hold­ing. Foods were not date marked as needed.

Non­crit­i­cal vi­o­la­tions: Ex­cept for a plain ring such as a wed­ding band, em­ployee must not wear jew­elry on their arms or hands while pre­par­ing food. Food work­ers must wear proper hair re­straints. Wip­ing cloths were not stored in san­i­tizer. Sur­faces of equipment need clean­ing. The walk-in cooler has a con­den­sa­tion leak. Em­ploy­ees stored per­sonal food on a food prepa­ra­tion sur­face and in the cus­tomer-use cooler; em­ployee food must be stored in a des­ig­nated area and la­beled as per­sonal food; per­sonal items must be stored where they can­not con­tam­i­nate the es­tab­lish­ment’s food or equipment.
