A yel­low and blue tin hold­ing a se­cret mix of 18 spices and herbs, Old Bay sea­son­ing has graced the ta­bles of Bal­ti­more row­house kitchens and seafood restau­rants since 1939. At chef Mo Manocheh’s two Lit­tle Italy spots (see Mo’s, page 30), the spice sparks most uses of crab, from Mary­land soup and steam­ers to sautéed soft shells.
