2 Make magic with leftovers!

There are so many delicious ways to enjoy Thanksgivi­ng leftovers—and it goes way beyond turkey sandwiches! Why not try . . .

Mashed Potato Dip! Serve this creamy dip with cut veggies, pretzel rods and an assortment of potato chips for a double-spud sensation! ● Microwave 2 cups leftover mashed potatoes until hot (2-3 minutes). Transfer to a large bowl. Add 1/2 cup sour cream, 2/3 cup shredded Cheddar, 1/2 cup mayo and salt and pepper; stir well. Transfer to a baking dish and top with a thin layer of breadcrumb­s; broil until goldenbrow­n on top, about 2 minutes.

Squash-and-turkey Tacos! You can assemble these tasty tacos, or put the filling ingredient­s in small bowls and let the guests help themselves! ● Cut cooked butternut or acorn squash into small pieces; toss with olive oil, maple syrup, salt and pepper. Roast until brown at the edges, 20 minutes. Trim leftover turkey into pieces; reheat in microwave. Pile squash and turkey on 6" corn or flour tortillas; top with crumbled goat cheese, dried cranberrie­s and a squeeze of lime. Offer hot sauce on the side.

✤ Stuffing-stuffed Mushrooms!

The toasty flavors of your signature stuffing taste even better baked inside cheesy mushroom caps! ● Preheat oven to 400°F. Reheat 2 cups leftover prepared stuffing in the microwave until hot; toss with 2 Tbs. grated Parmesan and 2 Tbs. sour cream. Remove the ( stems from 24 button mushrooms. Mound stuffing mixture in each cap. Drizzle with olive oil and a sprinkle of Parmesan. Bake 20 minutes or until golden and heated through.

Cranberry Crostini! This appetizer couldn’t be easier— or look more festive! ● Preheat oven to 400°F. Slice a baguette into 1/2" rounds and toast until golden brown. Slice a wheel of Brie, at room temperatur­e, in half lengthwise and sandwich with whole-berry cranberry sauce and chopped walnuts. Serve on a platter with baguette rounds and baby arugula.

Thanksgivi­ng Wontons! If you want all the flavors of the holiday in one mouthful, this is the dish for you! Mix together equal parts leftover cooked turkey (cut into small pieces), mashed potatoes and stuffing. Lay a storebough­t wonton wrapper on a flat surface and fill with about 1 Tbs. filling mixture. Moisten opposite edges of the wrapper with water and fold in half, pressing the edges together with your fingers. Fry wontons in canola oil in a large, deep skillet until crisp; blot on paper towels. Whisk 1 Tbs. cranberry sauce with 1 tsp. soy sauce and 1 tsp. orange juice for your dipping sauce.

Wash down all those delicious bites with your favorite bottle of wine, icecold pumpkin beer or mugs of spiked cider. Or make a festive cranberry spritzer by mixing 1 part sweetened cranberry juice and 2 parts sparkling wine— cheers!
