Irish Coffee with Chocolate-Dipped Strawberri­es

A match made in heaven—triple-spiked Irish coffee and candy-dipped berries!


WHIPPED CREAM SHAMROCKS 1 cup heavy cream 2/3 cup Marshmallo­w Fluff Green liquid food coloring

STRAWBERRI­ES 1 qt. strawberri­es 2 Tbs. vegetable shortening, optional 1 1/2 cups dark cocoa candy melts, melted 1 1/2 cups white candy melts, melted 1/2 cup green candy melts, melted COFFEE 1 cup heavy cream 4 tsp. confection­ers’ sugar 1/2 tsp. vanilla extract 2 cups hot strongly brewed coffee 1/4 cup Irish whiskey 1/4 cup Baileys Irish cream liqueur 1/4 cup + 2 tsp. coffee liqueur, such as Kahlua Additional coffee liqueur for drizzling Shamrocks: Line 8" square baking pan with enough plastic wrap to overhang sides by 2". On low speed, beat cream and Fluff until blended; on medium, beat until stiff peaks form. Tint green with food coloring. Spread in pan to create 8"x5 1/2" rectangle. Freeze until firm, at least 2 hours. Line baking sheet with wax paper. Using 1 1/2" shamrock-shaped cutter, cut out shapes. Transfer to baking sheet; freeze until ready to serve.

Strawberri­es: Line baking sheet with wax paper. If necessary to thin, stir 1 Tbs. shortening into cocoa and white candy melts. Dip half of strawberri­es into cocoa candy; dip remaining strawberri­es into white candy, letting excess drip off. Transfer to baking sheet. Reserve remaining candy. Let berries set until dry. If necessary, re-melt reserved candy; drizzle over strawberri­es. Let dry.

Coffee: On medium-high, beat cream, confection­ers’ sugar and vanilla until stiff peaks form. Transfer to pastry bag with large star tip; refrigerat­e. Combine hot coffee, whiskey, Baileys and 1/4 cup coffee liqueur. Divide among 4 Irish coffee mugs. Pipe whipped cream on top. Drizzle each with 1/2 tsp. coffee liqueur. Garnish with whipped cream shamrocks.
