Leprechaun Dip

Dip into something sweet—our fluffy lemon-coconut cream cheese leprechaun served with cookie dippers will bring the luck of the Irish to your next gathering!

1 pkg. (3.56 oz.) instant white chocolate pudding

1 1/2 cups milk

2 pkgs. (8 oz. each) cream cheese, at room temperatur­e

1 cup Marshmallo­w Fluff

2 tsp. grated lemon zest

1 Tbs. lemon juice

1 tsp. coconut extract

Pink, kelly green and orange concentrat­ed food colorings

1/4 cup canned vanilla frosting

3 graham cracker sheets, each sheet separated into 2 squares

4 marshmallo­ws

Black Twizzlers twist candy

Yellow Spree candies

1 tube (4.25 oz.) black decorating icing, fitted with writing tip

1 cup sweetened flaked coconut

White mint lentil candies

Green edible color food marker

White Necco wafers Assorted cookies

● Prepare pudding mix with milk according to package directions. In separate bowl, on medium speed, beat cream cheese and Marshmallo­w Fluff until smooth. Add pudding; mix until blended. Stir in lemon zest, juice and coconut extract; tint light pink with dot of pink food coloring. Reserve 1 tsp. for nose, covered. Transfer remaining mixture to serving plate. Using small spatula or spoon, form into 8"x7" oval shape. Cover with plastic wrap; refrigerat­e.

● For hat, tint frosting green with food coloring. Line cutting boards with wax paper. Arrange graham crackers on board, as shown.

● Using small serrated knife, trim top corners of graham crackers to create curved edge, as shown. Spread frosting over graham crackers to create one sheet. Refrigerat­e until frosting is firm, about 15 minutes. Place marshmallo­ws on serving plate at top of dip. For hat, using wide spatula, carefully lift frosted crackers in one piece and transfer to top of dip, resting on marshmallo­ws. Decorate hat with Twizzlers and Spree candies, attaching with icing.

● For beard and eyebrows, tint coconut orange with food coloring. Reserve 1 tsp. coconut. Place remaining coconut along side and edge of dip. For nose, spoon reserved 1 tsp. dip onto center of face. Pipe icing pupils on lentils; place on face. Pipe on mouth. Place reserved coconut above eyes for brows. Using food marker, draw shamrocks on Necco wafers; place on hat. Serve with cookies.
