Pizza Over Easy

Homemade thin-crust pesto pizza smothered in melted mozzarella cheese and topped with fresh over-easy eggs is perfect for a family meal or get-together with friends!

PESTO 4 cups packed (4 oz.) baby arugula, plus more for topping

2/3 cup extra-virgin olive oil

1/2 cup shelled pistachios

2 cloves garlic, roughly chopped

1/2 tsp. red pepper flakes, or to taste

Salt and pepper, to taste CRUST 2 (9-10 oz. each) balls pizza dough

Cornmeal or semolina flour*, for dusting

TOPPING 8 oz. mozzarella cheese, thinly sliced or grated

1/2 cup shredded Parmesan cheese

2 eggs

At least 45 minutes before making pizza, position rack in lower third of oven and place baking stone on rack. Preheat oven to 500°F, giving stone ample time to preheat. (Alternativ­ely, you can use baking sheet and preheat for as long as it takes for oven to come to temperatur­e.)

l Pesto: Place arugula, oil, pistachios, garlic, and pepper flakes in bowl of food processor or blender. Cover; pulse until smooth, about 30 seconds. Season to taste with salt and pepper.

l On lightly floured work surface, roll or stretch dough into disks about 10" in diameter. Generously dust pizza peel or underside of baking sheet with cornmeal or semolina flour. Lay 1 round of dough on peel or baking sheet. l Spread half of pesto over dough. Sprinkle with half of cheeses. Crack 1 egg in center of dough. Gently slide pizza onto hot stone or baking sheet. Bake until cheese is melted and egg white is cooked through, 8-10 minutes; edges of crust should be golden brown. Remove from oven; cool slightly before slicing. Top with fresh arugula. Repeat for second pizza. Breakfast Pizza: Try topping with sausage, bacon, and other breakfast favorites to suit your taste. *Semolina is a coarse flour made from yellow durum wheat.
