Buffalo Chicken Burgers with Blue Cheese Mayo
Looking for a different type of burger? Smothered in hot pepper sauce and chunky spiked blue cheese dressing, these chicken burgers won’t disappoint!
MAYO
1/3 cup mayonnaise
1/3 cup crumbled blue cheese
2 tsp. cider vinegar
1 tsp. hot pepper sauce
1/2 rib celery, cut crosswise into thin slices
PATTIES
1 1/4 lbs. ground chicken, preferably thigh meat
1/2 cup panko breadcrumbs
3 Tbs. hot pepper sauce
2 Tbs. finely chopped fresh chives
1/2 tsp. kosher salt
ASSEMBLY
Extra-virgin olive oil
4 hamburger buns, split
4 large leaves iceberg lettuce, thinly sliced
Mayo: Combine mayo ingredients, except celery; mash well with fork. Stir in celery. Cover and refrigerate until ready to use. l Patties: Mix patty ingredients; gently form 4 patties of equal size, each about 1" thick. With thumb or back of a spoon, make shallow indentation about 1" wide in center of patties to prevent them from forming a dome as they cook. Refrigerate patties until ready to grill.
Prepare grill for direct cooking over medium heat (350°F to 450°F). Brush patties with oil; grill over direct medium heat, with lid closed, until fully cooked (165°F), 8-10 minutes, turning once. During last 30 seconds to 1 minute of grilling time, toast buns, cut side down, over direct heat. Spread cut side of each bun with blue cheese mayo, then top with lettuce and a patty.
