Maraschino Cherry Brownies

Irresistib­ly delicious and decadent with sweet cherries, two kinds of chocolate and luscious white chocolate buttercrea­m frosting!

1 cup + 1 Tbs.

all-purpose flour

1/2 tsp. baking

powder

1/4 tsp. salt

1 cup white

chocolate chips

4 oz. unsweetene­d

chocolate, chopped

1 cup butter

1 1/4 cups

granulated sugar

2 eggs

1/4 cup drained

maraschino cherries,

finely chopped

1/4 cup maraschino

cherry juice

1/2 tsp. oil

1 cup confection­ers’ sugar

● Preheat oven to 325°F. Line 8" square baking pan with enough foil to over- hang sides by 2"; coat with cooking spray. Combine 1 cup flour, baking powder and salt; reserve. Chop 1/2 cup white chocolate chips; combine with remaining 1 Tbs. flour. Reserve.

● In large microwave- safe bowl, microwave 4 oz. chocolate and 1/2 cup butter on High in 30-second intervals, stirring, until smooth, about 2 minutes. Stir in granulated sugar until blended. Whisk in eggs until combined. Stir in cherries and juice, then reserved flour mixture until combined. Fold in reserved chip mixture. Pour into pan. Bake 45 minutes or until toothpick inserted into center comes out clean. Cool.

● In heatproof bowl set over pot of hot, not simmer water, melt remaining white chocolate chips with oil. Cool to room temperatur­e. On high speed, beat remaining butter until smooth. Add cooled chips; beat until combined. On low, gradually beat in confection­ers’ sugar until fluffy. Spread over brownies.
