Turkey Cheeseburgers
With creamy Havarti cheese and brioche buns, these are a delicious change of pace!
PATTIES 1 1/2 lbs. ground turkey, preferably thigh meat
2 scallions, trimmed, finely chopped
1 rib celery, trimmed, finely chopped
2 tsp. hot pepper sauce
1 tsp. minced garlic 1 tsp. kosher salt 1/2 tsp. freshly ground pepper
ASSEMBLY Extra-virgin olive oil
4 slices Havarti cheese, each about 1 oz.
4 brioche buns, split
4 leaves crisp lettuce
8 slices ripe tomato ● Mix patty ingredients; gently form 4 patties of equal size, each about 3/4" thick. With thumb or back of spoon, make shallow indentation about 1" wide in center of patties to prevent them from forming a dome as they cook. Refrigerate patties until ready to grill.
Prepare grill for direct cooking over mediumhigh heat (400°F to 500°F).
● Brush patties on both sides with oil; grill over direct medium-high heat, with lid closed, until fully cooked (165°F), 8-10 minutes, turning once. During last 30 seconds to 1 minute of grilling time, place 1 slice cheese on each patty to melt; toast buns, cut side down, over direct heat. Build each burger on bun with patty, lettuce leaf and 2 tomato slices.
