Tia Mowry’s Chilled Watermelon Soup
Perfect on a hot summer day, this quick-and-easy chilled soup gets a kick of heat from a pinch of cayenne pepper!
❏ 4 cups watermelon in large cubes and 1/3 cup diced (for garnish)
❏ 1 cup strawberries, halved
❏ 1/3 cup apple juice concentrate, thawed ❏ 1 Tbs. fresh mint leaves
❏ 1/8 tsp. cayenne (or less, if you don’t like heat)
❏ Mint sprigs for garnish
● In covered blender or food processor, process cubed watermelon, strawberries, apple juice concentrate, mint and cayenne until smooth. Refrigerate, covered, for 1 hour to let flavors blend. Serve in small, chilled bowls and garnish with diced watermelon and a sprig of mint. Makes 4- 6 servings.
