Chex Chocolate Chunk Peanut Butter Cookies
Chex cereal adds delightful crunch to rich peanut butter cookies dotted with semisweet chocolate chunks!
1 CUP all-purpose flour
1 tsp. baking soda 1/2 tsp. salt
1/2 cup unsalted butter, room temperature
1/2 cup creamy peanut butter
1/2 cup granulated sugar
1/3 cup packed brown sugar
1 egg 1 tsp. vanilla extract 1 1/2 cups Rice Chex cereal 1 cup semisweet chocolate baking chunks
● Preheat oven to 350°F. Line large baking sheet with parchment paper. In large bowl, whisk together flour, baking soda and salt; set aside.
● In stand mixer, cream together butter, peanut butter, granulated and brown sugars. Add egg and vanilla. Beat in flour mixture, mixing until just combined. With spatula, fold in cereal and chocolate chunks.
● Drop dough by rounded tablespoons onto baking sheet. Bake 12 minutes or until centers are set. Cool 5 minutes on baking sheet before transferring to rack. Store in airtight container for up to 5 days.
