Lucky Charms Cupcakes

Bake these charming cupcakes topped with marshmallo­w frosting, and they'll magically disappear in an instant!

CUPCAKES 1 cup Lucky Charms cereal

1/2 cup milk

1 1/4 cups all-purpose flour

1 tsp. baking powder

1/2 tsp. baking soda 1/2 tsp. salt 2 eggs 3/4 cup sugar 1 tsp. vanilla extract 1/2 cup oil

FROSTING 2 egg whites, preferably pasteurize­d

1/2 cup sugar

1/4 tsp. cream of tartar

2 tsp. vanilla extract Additional cereal, optional

Cupcakes: Preheat oven to 350°F. Line 12 muffin cups with cupcake liners. Mix cereal and milk. Soak 20 minutes, stirring occasional­ly. Strain out cereal; discard. Set milk aside.

● Whisk flour, baking powder, soda and salt; set aside. In large bowl, beat eggs, sugar and vanilla. Stir in half of flour mixture, then oil until blended. Add remaining flour mixture, then milk, stirring until blended. Divide among liners. Bake 16-18 minutes or until toothpick inserted into centers comes out clean. Cool 10 minutes; transfer from pan to rack. Cool.

● Frosting: Place egg whites, sugar and cream of tartar in double boiler over medium-high heat. Whisk constantly until sugar has dissolved and whites are warm to touch. Transfer to mixer fitted with whisk. Beat until stiff and glossy. Add vanilla; mix until combined. Pipe or spread over cupcakes. Garnish with cereal.
