Chex Brownies
With a layer of chocolate chips and crisp cereal on the bottom, these brownies are guaranteed to satisfy any chocolate craving!
2 cups Rice Chex cereal
1/2 cup semisweet chocolate chips
1/2 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 tsp. salt
1/2 cup unsalted butter, at room temperature
1 cup sugar 2 eggs 1/3 cup oil 1 tsp. vanilla extract
Preheat oven to 325° F. Grease 8" square baking pan. Spread cereal and chocolate chips in an even layer over bottom of pan and set aside.
● In medium bowl, whisk together flour, cocoa powder and salt; set aside. In large bowl or stand mixer, cream together butter and sugar on medium- low speed. On low, beat in eggs, oil and vanilla. Whisk in flour mixture until well combined.
● Carefully pour and spread batter over Chex and chocolate chip layer in pan; smooth top. Bake 35- 40 minutes or until toothpick inserted into center comes out with just a few crumbs on it. Cool, then cut into squares. Serve immediately or store in airtight container for up to 3 days.
