Spicy Watermelon Mojito Ice Pops

With a spicy wink of cayenne, these frozen mocktail pops are refreshing and delicious—like eating fire and ice all at the same time!

2 1/4 lbs. seedless watermelon

1/4 cup freshly squeezed lime juice

3 Tbs. fresh mint leaves, plus more for molds

2 Tbs. pure maple syrup or raw honey 2 pinches cayenne, as desired ●

Cut watermelon from rind. Cut flesh into chunks ( you should have about 6 cups); place flesh in blender. Cover; blend on mediumlow speed until mixture is liquefied. Strain juice through sieve into measuring cup, pressing pulp to extract as much liquid as possible. Discard pulp.

Return juice to blender; add lime juice, 3 Tbs. mint leaves, maple syrup or honey and cayenne. Blend just enough to chop mint— do not go too far or you’ll change color of juice. Let mixture steep 10 minutes to infuse juice with mint flavor. You should end up with at least 3 cups of liquid.

Add 2 or 3 leaves to each mold. (This is purely for aesthetics; if you’re pressed for time, skip this step.) Carefully pour a portion of watermelon mixture into each mold; insert wooden sticks or handles. Set molds in freezer for at least 3 hours.
