S’mores Waffles

What better way to end a meal (or start the day!) than with a campfire favorite turned into a heavenly waffle treat dripping with melted chocolate!

2 flour, cups sifted self-rising

1/3 cup sugar

2 1/2 Tbs. unsweetene­d cocoa powder, sifted

Pinch of salt 3 eggs, separated 1 1/2 cups milk 1/4 cup butter, melted

About 40 large marshmallo­ws

1 1/3 cups bitterswee­t chocolate chunks, about 7 oz.

Additional melted chocolate, optional

l Waffles: Preheat oven to 200°F. In large bowl, whisk together flour, sugar, cocoa, salt, egg yolks, milk and butter until smooth. In separate bowl, whisk egg whites until stiff; gently fold into batter, one-third at a time.

l Preheat waffle iron and grease with a little butter. For each waffle, ladle small amount of batter onto waffle iron; cook 2-3 minutes until crisp. Transfer to baking sheet; keep warm in oven while cooking remaining batter in same way. l Meanwhile, cut 10 marshmallo­ws in half; place on top of cooked waffle. Using blowtorch or broiler, toast tops of marshmallo­ws until golden and soft. Place a quarter of chocolate chunks on top of marshmallo­ws, then top with a second hot waffle. If desired. serve drizzled with extra chocolate.
