Lighten-up Recipe

Pretty as a picture and even more delicious than it looks, this towering torte made with crisp meringue layers, juicy fresh fruit and fluffy, fat-free topping adds up to just 172 calories per serving! The classic recipe per serving: 312 calories; 19 g. fat 1/2 cup graham cracker crumbs

1/4 cup + 1 tsp. confection­ers’ sugar

4 egg whites, at room temperatur­e

1/4 tsp. cream of tartar 3/4 cup superfine sugar Lighten-up! version per serving: 172 calories; 2 g. fat 1 env. whipped topping mix from 2.6-oz. pkg.

1/2 cup cold fat-free milk 1/2 cup plain nonfat Greek yogurt 1/8 tsp. almond extract

2 cups strawberri­es, about 8 oz., sliced, 1 1/2 cups

Preheat oven to 250°F. Line 2 baking sheets with parchment paper. On paper, with pencil, draw 3 (7") circles; turn papers over. Combine graham cracker crumbs and 1/4 cup confection­ers’ sugar; reserve. On medium-high speed, beat egg whites and cream of tartar until foamy. Gradually beat in superfine sugar, 1 Tbs. at a time, until sugar dissolves and mixture is glossy and stiff peaks form, 2- 4 minutes. Add half of graham cracker mixture to egg whites; using rubber spatula, gently fold in until just blended. Fold in remaining cracker mixture until just blended. Evenly divide mixture among circles, about 1 1/4 cups each, spreading evenly into rounds. Bake 1 hour, rotating pans after 30 minutes. Turn off oven; let stand in oven with door closed 2-2 1/2 hours or until surface is dry and meringues easily lift off paper. On low, beat whipped topping mix and milk until blended; on high, beat 4 minutes or until thickened and soft peaks form. Fold in yogurt. Place 1 meringue on serving plate; spread with 1/3 of yogurt mixture. Top with 1/3 of fruit. Repeat
